Cinnamon
Cinnamon is a spice which has come into such common use, it goes into nearly everything nowadays. Virtually all
the cinnamon sold in the U.S. is known as cassia bark, which has a spicier flavor than cinnamon taken from the
island of Ceylon. Ceylon cinnamon has a much more delicate flavor. Cinnamon is popular for everything from
pickling spice mixes to puddings to coffee, tea, and wine, to pastries, and even toast. And of course, what apple pie
would be complete without cinnamon?
