Cream of tartar
Many people have this in their spice racks and have no idea what it does. Cream of tartar is derived from the crust
of wine casks, which is where the tartaric acid in the grapes has precipitated out. Cream of tartar also makes good
baking powder: combine 1/4 tsp. baking soda and 1/2 tsp. cream of tartar. It also helps maintain the fluffiness of
meringues (whipped egg whites) and is a good copper cleaner.
