About this Recipe:

TillaTilla: Fresh herb frittata or Kookoo sabzi is a famous Iranian dish. One of the classic ingredients in this dish is barberry which is a sour berry also known as Zeressk in Iran. This is a very healthy and aromatic dish which can also be served with some plain yogurt as a side dish.


Main Ingredients:

Fresh herb leaves: 1 lb, chopped (parsley, dill, coriander, spinach, spring onion ends, ...)
Eggs: 4, beaten
Walnuts: 3-4 tbsp, crushed
Barberry: 1 tbsp (optional)
Turmeric: 1 tsp (optional)
Vegetable Oil: 2 tbsp
Salt
Pepper


Directions:

1. Heat anon-stick pan with 2 tbsp oil.

2. Mix all ingredients together well and pour into the pan.

3. Place the lid and cook on medium-low heat for 20 min or till the bottom surface turns golden brown.

4. Cut it into 4 pieces radially and turn over them.

5. Cook for another 20 min or till the other surface turns golden-brown as well.

6. Serve it cold or hot with some walnuts on top.

Thank you Tilla, I love this kookoo, you can also cut out middle pieces of toast bread, using a cookie cutter, then place the toast bread pieces in a frying pan with a little bit of oil and scoop in a few spoonfuls of your Frittata mixture into the hole in the middle of the toast.Fry the whole thing on low heat and flip, you should not use a lot of oil since it will all get absorbed by the toast.
