LadanEM: This is a healthy vegetarian dish. Walnut not only makes this a delicious meal but also adds to the nutritional value of this simple dish.

Main Ingredients:
Walnuts: 2 cups Olive oil: 3 tbsp Fresh parsley and mint: 0.5 kilograms, chopped Onion: 2 medium, chopped Eggs: 5 Flour: 2 tsp Saffron: 1/2 tsp Baking powder: 1/4 tsp Salt and pepper: to taste
Directions:
1. Preheat the oven to 425 F.
2. Fry chopped onion with some olive oil until golden.
3. Grind the walnuts and add them to the onions. Stir for 1-2 min and then remove from the heat. Let it cool down.
4. Into a bowl, add eggs, parsley, mint, flour, baking powder, rest of the olive oil, salt and pepper. Mix well.
5. Add onions and walnuts to the bowl.
6. Transfer the mixture into an oven proof pan and cook in the oven for about 30 minutes.
