About this Recipe:
This is a healthy recipe for Arroz con Pollo or rice with chicken which is a traditional Latin American and Caribbean dish.

Main Ingredients:
Boneless skinless chicken breast: 1 lb
Canola oil: 2 tbsp
Garlic 1 tbsp, minces
Shallots: 3, chopped
Fat-free chicken stock: 2 cups
Basmati rice: 1 cup
Cilantro: 1/2 cup, chopped
Jalapeno: 1, sliced
Lime juice: 1/2 cup
Frozen peas: 1 cup
Black pepper
Cumin
Salt
Directions:
1. Saute cut-up chicken in the oil in a 3-quart stockpot over high heat; season generously with pepper and cumin.
2. Add garlic and shallots and stir occasionally till the chicken's been lightly cooked on all sides.
3. Add the stock and cover with a lid. When it boils, add the rice, cilantro, and jalapeno.
4. Cover and cook over low heat till rice is almost tender - about 10 or 15 minutes.
5. Add juice and peas and slightly season with salt. Simmer till peas are hot, another 10 or 15 minutes.
