Tahmineh: This is a healthy and delicious vegetarian soup. Sprinkle over with some chopped parsley before serving.
Main Ingredients:
Red Beans: 1 cup Mushrooms: 5-6 medium size, chopped All purpose flour: 2 tbsp Onions: 1 small, sliced thinly Vegetable Oil: 2 tbsp Spinach: 75 gr, chopped Tomato Paste: 2 tbsp Salt Pepper Chili powder
Directions:
1. Wash and soak the Beans in 5 cups of water overnight. You can avoid this step, but I strongly recommend it (It makes Beans more digestible and reduces the cooking time by 45-60 min).
2. Place beans in a pot and cover with water 2 to 3 above the level of beans. Bring to boil, and then reduce the heat to medium. Cook for 2 hours or until the beans are well cooked.
3. Add mushrooms and cook for 10 more min.
4. Add flour, tomato paste, chopped spinach, salt, pepper and chili powder and cook for 5 more min.
5. Meanwhile heat 2 tbsp oil in a frying pan over medium heat. Add onions and fry until slightly golden.
Great. I added some ground beef to it (after consulting with chef Tahmineh of course) When I mixed everything together what I came up with was something that looked like chili, smelled like chili, and tasted like chili. (I'm new at this!) Whatever you may call it, it was heavenly. Taking Bahar's recommendation I tried it cold as well and I second her comment, this recipe is a hit.
I don't really understand when you say: [Place beans in a pot and cover with water 2 to 3 above the level of beans.] Can you clarify this, do you mean that the water should be 2-3 times the volume of the other ingredients?

it s a healthy food. i prefer to cook it without spinach.
