i love this! i was just looking around for easy and healthy recipes. i can't wait to try this with sweet potatoes!also, i highly recommend using coconut oil as a an oil/butter substitute at all times. not only is it not bad for you - it's positively healthy! it can be used in temperatures up to 350 degrees F.one more addition to your fine recipe - a little freshly grated nutmeg would add a nice peppery taste, especially suited for eggs and potatoes.
I like this!!!! :] i'm happy because i was finding a healthy and easy to cook Vietnamese main course great timing! because, we will just cook on Wednesday at our school. and i wish that my group mates and the judge will be happy for that potato frittata.... but i wish that they would love it i really love your potato frittata i just cook it first at home i taste it and it was excellent food and it's healthy.noted by - Shelly
