Mint Sauce Garden Salad

About this Recipe:

This easy to prepare and quick garden salad recipe is my favorite.


Main Ingredients:

Lettuce: 3 cups, chopped
Baby tomatoes: 1+1/2 cups
Cucumber: 1+1/2 cups


Dressing Ingredients:

Light Mayonnaise : 2+1/2 tsp
Extra Virgin Olive oil : 1 tsp
Fresh quizzed lemon juice : 1+1/4 tsp
Dried Mint powder : 1/4 tsp
Fresh ground Pepper
Salt


Directions:

1. Chop the lettuce in thin cuts.

2. Cut the baby tomatoes in half.

3. Coarsely chop the cucumbers in medium pieces (1.5 cm^3). I prefer keeping the skin on, it adds more color to your salad.

4. Mix the dressing ingredients in a small bowl and add it to the chopped ingredients.
