Dungeness Crab Bisque

About this Recipe:

In this recipe, you can use a combination of shrimp and crab or replace them with lobster.


Main Ingredients:

Onion: 1-2 tbsp, finely chopped
Butter: 2-3 tbsp
Flour: 2 tbsp
Chicken broth: 2 cups
Fat-free half-and-half: 2 cups (or replace with milk)
Dungeness crab meat: 1 lb, thawed
Salt and pepper to taste
Chopped fresh parsley

Directions:

1. Saute onion in butter for couple of minutes or until soft.

2. Add flour. Stir and cook for 1 more minutes.

3. Add chicken broth and half-and-half. Cook for 5 more minutes on medium heat.

4. Add crab meat. Season with salt and pepper. Cook until the mixture thickens.

5. Garnish with parsley before serving.

Spend lots of time on the Oregon coast so used fresh Dungeness crab--am going to try sallmon next
