Cream of Broccoli Mushroom Soup

About this Recipe:

Navid: This is quite a rich and creamy soup. The flavor of mushrooms compliments the flavor of boiled broccolis and the cream brings everything together.

Main Ingredients:

Mushrooms: 1 cup, chopped
Broccoli: 2 cups, chopped
Chicken Broth: 1.5-2 cups
Whipping Cream: 1/2 cup
Butter: 1 tbsp
Olive oil: 1 tbsp


1. Melt butter with olive oil in a frying pan. Add mushrooms, season and saute for 10 min.

2. Meanwhile, in a saucepan, bring chicken broth to boil. Add broccolis, salt and pepper and cook them for 5-10 min till soften.

3. Let the soup cool for a while. Add mushrooms and then process in a food processor until smooth.

4. Pour back the soup into the saucepan. Add cream and mix well. Taste and adjust seasoning.
