Main Ingredients:

Boned salmon fillets: 4, each about 200 grams or 6 oz.
Melted butter: 1/2 cup (or replace with olive oil)
Lemon juice: 2 tbsp
Chives: 1 1/2 tbsp, chopped
Dijon mustard: 2 tsp
Grated lemon peel: 1 tsp
Salt and pepper to taste

Directions:

1. Preheat oven to 400 F.

2. In a small bowl, combine the butter, half of the lemon juice, chives, mustard, lemon peel, salt and pepper until well blended.

3. Line a baking sheet with foil. Rub one tablespoon of the mustard-chive butter over the foil. Place the fillets skin side down on the foil and spoon about one teaspoon of lemon juice over each fillet. Season with salt and pepper.

4. Spoon one tablespoon of mustard-chive butter over each fillet. Bake for about 15 minutes.

Tips: You'll know the salmon is done when on inserting a knife, it begins to flake.
