Turnip Soup


Turnip Soup

Main Ingredients:

Turnip: 1 large, diced
Celery: 1 cup, diced
Onion: 1 medium, diced
Potatoes: 2 medium
Butter: 2 tbsp
Mayonnaise: 1 tbsp
Parsley: 1 tbsp, fresh chopped
Chicken Broth: 6 cups
Cream: 1/3 cup
Lemon Juice
Salt
Pepper


Directions:

1. Melt butter in a saucepan, and then add onion and celery. Saute till softens.

2. Add turnip and potatoes; continue cooking.

3. Mix in the mayonnaise sauce and chopped parsley.

4. Add 3 cups chicken broth, salt and pepper and cook completely.

5. Process the soup in a blender or food processor.

6. In to the pan, add the soup and the rest of the chicken broth.

7. Cook for 30 min on medium heat.

8. To serve, add lemon juice and cream.
