Main Ingredients:
Couscous or bulgur: 2 cups, cooked and cooled Green onions: 4 medium, or one onion, chopped Chopped parsley: 3/4 cup Fresh mint leaves: 1/2 cup, chopped Chopped fresh tomatoes: 1 cup, seeded and peeled Red, green or yellow sweet peppers: 1/2 cup (optional) Olive oil: 5 tsp Lemon or Meyer lemon juice: 5 tsp Salt and pepper
Directions:
1. Assemble the basic chopped ingredients and mix with the grain until you like the results.
2. Drizzle in the olive oil and finally add lemon juice, salt & pepper to your taste.
