Spinach and Lentil Salad with Balsamic Vinaigrette

About this Recipe:

This is a very delicious and healthy salad full of vitamins and minerals specially vitamin A and iron. It is also contains lots of proteins and fibers.


Main Ingredients:

Spinach: 2 cups
Corn:1 small
Mushroom: 1/2 cup, sliced
Lentil: 1/4 cup
Balsamic Vinegar: 1 tbsp
Olive Oil: 2 tbsp
Salt
Pepper


Directions:

1. Cook the corn in boiling water for 10 min. Rinse with cold water. Scrape the corn kernels by using a sharp kitchen knife and a cutting board.

2. Meanwhile, cook lentils with some salt in boiling water for 20 min or until done. Rinse with cold water.

3. To make the vinaigrette, mix olive oil and balsamic vinegar with some salt and pepper. Whisk them together thoroughly.

4. Combine spinach, chopped mushrooms, cooked lentils and corns. Pour the vinaigrette over the salad and toss before serving.
