Roasted Paprika Chicken with Mushroom Sauce

Roasted Paprika Chicken with Mushroom Sauce
Recipe By: Navid

About this Recipe:

NavidNavid: This is one of the most delicious and quickest chicken recipes that I know. The mushroom sauce on its own is a very creamy and wonderful side dish. Mixing this sauce with the paprika taste and fresh herbs makes this dish quite unique.

Main Ingredients:

Chicken Breast: 2
Olive Oil: 1 tbsp
Onion: 1 medium, chopped
Garlic: 2 cloves
Thyme: 4 sprigs fresh
Sage Leaves: 4
Paprika: 1-2 tbsp
Salt
Pepper

Sauce Ingredients:

Mushrooms: 1/2 lb
Cream: 3/4 cup
Soy Sauce: 1 tbsp
Corn Starch: 1 tbsp
Butter: 1 tbsp
Olive Oil: 1 tbsp
Salt
Pepper

Directions:

1. Preheat the oven to 450 F.

2. Cut each chicken breast into two slices of equal thickness.

3. Season chicken slices with salt and pepper and cover with paprika.

4. Meanwhile, in a frying pan saute onion with 1 tbsp olive oil till golden.

5. Add chicken breasts to the pan and fry each side for 1-2 min.

6. Put the chicken into an aluminum foil pan and sprinkle over with sage leaves, thyme leaves and sliced garlics.

7. Cover with aluminum foil and cook in the oven for 10 min.

8. Meanwhile, in a separate pan, saute mushrooms with 1 tbsp olive oil and some salt and pepper till golden.

9. Add cream and soy sauce and continue cooking on medium-low heat.

10. Cream the butter and cornstarch together and slowly blend it into the sauce.

11. Continue cooking the sauce for 5 min or until it thickens.

Came home tired looking for an easy and delicious recipe and I found this one. I didn't have the ingredients to make the mushroom sauce so i just had it with veggies. Healthy meal. I strongly recommend it.

Courtney, Guest2011 Mar 23

Petra,I used boneless skinless chicken breast for my recipe and it was great and juicy. Just make sure the pieces are not sliced thin.

I'm sure it'll turn out just fine. Sounds like a great recipe. I think I will add something like Potatoes to serve the sauce on, or Rice. Thanks for the recipe. I'm using chicken thighs with bone in though. I'll manage! Later..

I didn't have the cream & fresh mushrooms, so I just used cream of mushroom soup. My husband pointed out though that the soup adds about 8 grams of fat per serving. In the future I may try to either use a lowfat version of the soup, or follow the recipe, but use lowfat cream.

I couldn't believe how good it was. We had company and I had to hold everything until we were ready to sit down and the chicken and sauce were outstanding. Thanks, thanks, thanks!

wanted to try something different with a mushroom sauce and was looking to for less salt and fats. I used 1per cent milk for the sauce and unfortunately only had dried herbs. Meal was awesome and will be making this again. It was so easy and tasty.
