Rice with Chicken

About this Recipe:

This is a healthy recipe for Arroz con Pollo or rice with chicken which is a traditional Latin American and Caribbean dish.

Main Ingredients:

Boneless skinless chicken breast: 1 lb
Canola oil: 2 tbsp
Garlic 1 tbsp, minces
Shallots: 3, chopped
Fat-free chicken stock: 2 cups
Basmati rice: 1 cup
Cilantro: 1/2 cup, chopped
Jalapeno: 1, sliced
Lime juice: 1/2 cup
Frozen peas: 1 cup
Black pepper


1. Saute cut-up chicken in the oil in a 3-quart stockpot over high heat; season generously with pepper and cumin.

2. Add garlic and shallots and stir occasionally till the chicken's been lightly cooked on all sides.

3. Add the stock and cover with a lid. When it boils, add the rice, cilantro, and jalapeno.

4. Cover and cook over low heat till rice is almost tender - about 10 or 15 minutes.

5. Add juice and peas and slightly season with salt. Simmer till peas are hot, another 10 or 15 minutes.

This was an excellent Recipe. I am a beginner - Intermediate Cook and was able to prepare this with relative ease. I was pleasently surprised by the flavor. I highly recommend this Recipe.

Excellent recipe. I did alter it to my like, added more veggies to the recipe, and took out the lime juice, and cilantro. This is really good. My husband loved it! I love it to and its going down in my recipe book. Thanks for the recipe!

Quick and easy but could use some more flavor... may need to add some more spices. Used mixed veggies instead of just peas and added green olives and onions. Simple though and good for days you need a fast meal without much thought!
