Main Ingredients:
Flour: 2+1/4 cups Butter: 1 cup, cut into pieces Sugar: 2 tbsp Salt: 1/2 tsp Vanilla powder: 1 tsp Water: 1/3 cup ice-cold
Filling Ingredients:
Plums: 3 pounds, rinsed and dried Sugar: 1/4 cup Egg white: 1, lightly beaten
Directions:
1. Put the flour, salt, and sugar in a large bowl. Add the butter pieces, and pinch with the fingers to create a crumb texture.
2. Make a hole in the middle and pour in the water and vanilla. Quickly work in the flour to create dough. Do not over-mix.
3. Divide the dough into 2 disks, wrap in plastic, and refrigerate 15 minutes before rolling out.
4. To make the filling, Roll one of the pastry disks into a rectangle and lay on a baking sheet.
5. Lay down whole plums on the pastry, leaving a 1-inch/2.5 cm edge all around. Cut the remaining plums to fill in any gaps. Sprinkle over the sugar.
6. Roll out the second disk of dough into a larger rectangle. Lay over the plums and seal and trim the edges.
7. Cut two slits in the top of the tart. Paint all over with the beaten egg white so the tart will emerge glossy.
8. Bake at 400ºF/200ºC until the pastry is done, about 25 minutes. You can use the The plum juices spilled out the baking sheet to brush the tart.
