Sara: Afternoon tea time could be made special with this recipe. Coconut and orange work well together to bring you a wonderful taste.

Main Ingredients:
All purpose flour: 1.5 cups
Flaked coconut: 3/4 cup
Orange Juice: 3/4 cup
Sugar: 3/4 Cup
Butter: 1/2 Cup ( room temperature)
Egg: 2
Baking Powder: 1.5 tsp
Vanilla Powder: 2 tsp
Directions:
1. Preheat oven to 350 F .
2. Grease a loaf pan or line a 12 cup muffin tin with paper cups.
3. In a large bowl, beat butter with an electric mixer until creamy. Beat in sugar and then one at a time add in the eggs.
4. Place coconut flakes, baking powder, vanilla powder and flour in a bowl.
5.In the egg mixture beat in 1/3 of the flour mixture, blend well then add 1/2 of the orange juice. Repeat addition and end with flour mixture.
6. Pour the batter in the loaf pan or divide the batter between the muffin cups filling about 3/4 full.
7. For the loaf bake 30 to 40 minutes or until a tooth pick inserted in the center comes out clean. For cup cakes bake 20 to 25 minutes.
