Healthy Chicken and Vegetable Soup

About this Recipe:

This is a very healthy and nutritions chicken and vegetable soup recipe which contains lots of vitamins and minerals. Feel free to add your favorite vegetable to this recipe.

Main Ingredients:

Chicken breasts: 3, cut into cubic pieces
Onion spring: 2 springs, chopped
Carrot: 2 small, chopped
Garlic: 1 clove, chopped
Chicken broth: 8 cups (2 liters)
Bay leaves: 2
Cilantro: 2 tbsp, chopped
Noodle: 100-120 gram
Green pea: 1 cup, cooked
Olive oil: 2 tbsp
Cumin: 2 tsp
Corn: 1/2 cup, cooked (optional)
Soy beans: 1/2 cup, cooked (optional)
Parsley: to decorate (optional)
Lemon juice: 2 tbsp (optional)
Salt and Pepper


1. Saute garlic with carrots and onion springs in olive oil for 5 minutes.

2. Add chicken and cilantro. Season with cumin, salt and pepper and saute for 5 minutes or until chicken turns white.

3. Add chicken broth, corn, soy beans and bay leaves. Bring to boil and cook for 10 min.

4. Add noodle and cooked green peas and continue cooking until noodles are done.

5. Decorate with parsley and serve with lemon juice.
