Grilled Chicken Breast and Vegetables
About this Recipe: Navid : This is a very basic grilled chicken recipe. You can add your favorite spices and herbs to the recipe (like paprika and dried rosemary).
Main Ingredients:
Chicken breasts: 4 halves skinless boneless
Olive oil: 2+1 tbsp
Garlic: 2 cloves, finely minced
Dried thyme: 1 tsp
Fresh lemon juice: 1 tbsp
Freshly ground black pepper: 1/2-1 tsp
Salt: 1/2-1 tsp
Bell peppers: 2, sliced
Zucchini: 2, sliced
Directions:
1. Wash chicken breasts and pat dry.
2. Mix 2 tbsp olive oil, minced garlics, thyme, salt and pepper.
3. Rub the mixture over chicken breasts.
4. Drizzle 1-2 tbsp olive oil over sliced zucchini and bell peppers. Season with salt and pepper.
5. Grill chicken breasts and vegetables over medium-high heat. Do not over cook them (about 5 min on each side).
6.Sprinkle with fresh lemon juice and serve.

I made this for may family last night and they loved it ! i didn't have thyme though so I used oregano and rosemary instead.thanx for posting this wonderful and simple recipe.
