Green Pea and Mint Soup

About this Recipe:

This is a sweet and refreshing soup. Green pea and mint always go well together and make delicious dishes. Try to add a little bit sugar if you prefer a sweeter soup.


Main Ingredients:

Frozen Green Peas: 2 cups
Vegetable Broth: 2 cups
Shallot: 1, chopped
Vegetable Oil: 1 tbsp
Onion Spring: 1 tbsp, chopped
Mint: 2-3 tbsp, chopped
Salt
Pepper


Directions:

1. In a frying pan, saute shallot and onion spring with oil for 5 min.

2. Meanwhile, in a saucepan, bring vegetable broth to boil. Add green peas, salt and pepper and cook them for 5 min.

3. Add chopped mint, shallot and onion spring and cook for 2 min.

4. Let the soup cool for a while then process in a food processor until smooth.

5. Adjust the seasoning and serve
