Anousheh: Eggplant dip is enjoyed as an appetizer or side dish. It is served best with pita or French bread.

Main Ingredients:
Eggplant : 1 big Plain low-fat yogurt : 3 cups Garlic: 1 minced clove Salt Pepper
Directions:
1. Preheat the oven.
2. Smoke the eggplant by keeping it directly on the stove for about 10 min depending on the size of the eggplant. Turn them once or twice until they blackened and collapsed.
3. Meanwhile mix the garlic with the yogurt and add salt and pepper to taste.
4. When eggplant is cooked, remove the skin and mash the eggplant
5. Then mix it with yogurt.
