Eccles Cake
About this Recipe: Navid : A perfect complement to a cup of tea, these famous little English treats are named after Eccles town in England.
Main Ingredients:
Puff Pastry: 1 Sheet (10x10 in)
Currants: 4 tbsp
Sugar: 3 tbsp
Directions:
1. Preheat the oven to 350 F.
2. Sprinkle over a baking sheet with 2.5 tbsp sugar.
3. Transfer your puff pastry onto the sugar coated surface .
4. Sprinkle over the half of the puff pastry with the currants.
5. Sprinkle over the currants with the remaining sugar.
6. Gently fold the puff pastry over the filling.
7. Roll the folded pastry sheet to its half thickness
8. Cut the pastry into 1.5 inch squares.
9. Bake them in the oven for 20 to 25 minutes until golden.

I haven't tried the recipe but I tried the cookies Navid baked, and they taste heavenly.

I haven't tried this recipe, but no matter how good they taste- they are the wrong shape! They should be round, not square!
I agree they should be round, sure these are very nice. This is the eccles cakes I remember however...

I'm so happy to have found this recipe, I'm sure will try it.I know of a French cookie that look same(puff pastry); but unfortunately the company doesn't make it anymore.And yes, the shape is square!
