Dark Hot Chocolate

About this Recipe:

While not the worst offender of the holiday season, hot chocolate isn't quite the healthiest beverage, especially when you're having a few mugs a day. But that doesn't mean you'll have to switch to tea to get your hot beverage fix - simply use the recipe below. This one makes use of Almond Milk, which provides essentially fatty acids with fewer calories than regular milk, and dark cocoa powder, which is loaded with antioxidants.


Main Ingredients:

Zero Calorie Sweetener: 1/2 cup Stevia or Splenda (or replace with sugar)
Almond Milk: 4 cups (unsweetened)
Peppermint Extract: 1/2 tsp (optional)
Hot Water: 1/3 Cup
Dark Cocoa Powder: 1/4 Cup

Directions:

1. First, mix together the sweetener, hot water and cocoa in a saucepan.

2. Stir this over medium heat until it begins to boil. Cook for one minute, stirring constantly.

3. Next, stir in the almond milk and heat, but do not boil. Remove from heat and add the peppermint extract, stirring again. Serve immediately.
