Carrot Mini Muffins Without Eggs
About this Recipe: Veraza: A great way to add veggies to your diet. Full of fiber and taste, kids will love them.
Whole wheat flour: 1/2 cup All-purpose flour: 1/2 cup Quick rolled oats: 1/2 cup Brown sugar: 1/2 cup Cinnamon: 1.5 tsp Baking powder: 1 tsp Baking soda: 0.5 tsp Salt: 1/4 tsp Soymilk: 3/4 cup mixed with 1 tsp. vinegar Canola oil: 1/4 cup Finely grated carrots: 1 1/2 cups (approximately 3 carrots)
1. Preheat the oven to 375F or to 325F for a convection oven.
2. Mix the ingredients in the order of the recipe until smooth.
3. Bake for 40 minutes or for 25 minutes in a convection oven.
4. Cool a few minutes for easier removal.

I hope they turn out Good..... I made them for my sister over summer break. It was quick, easy, and Fun. I put about 3/4 of a cup of shredded coconut in it. I know thats not what the recipe calls for but, I like to make it more interesting.Thanks for the recipe!
