About this Recipe:
Navid: Quick and flavorful southwestern salad that makes a great potluck dish. It is also very healthy and packed with iron, fiber and vitamin C.

Main Ingredients:
Black bean: 1 can Corn: 1 can Cherry tomatoes: 1 cup (or 2 medium tomatoes), diced Fresh cilantro: 2 tbsp, chopped Fresh lemon juice: 2-3 tbsp Olive oil: 1-2 tbsp Salt and black pepper: to taste Cayenne pepper: 1/4 tsp (optional)
Directions:
1. Drain the corn and beans and rinse in cold water.
2. Mix all ingredients in a salad bowl.
3. Taste and adjust the seasoning if necessary.
