Beet and Yogurt Salad

About this Recipe:

Beet and yogurt salad or "mast o laboo" is a very popular sweet side dish in North of Iran. It is fairly easy to make and is quite healthy as well. This recipe is adopted from Turmeric and Saffron blog.


Main Ingredients:

Beets: 2, medium
Plain yogurt: 2 cups
Sugar: 1-2 tbsp


Directions:

1. Cook the beets in boiling water until tender, about 45 min. Alternatively, you can steam them.

2. Put the beets in ice water for 10 minutes. Peel and grate them.

3. Mix well with yogurt and sugar. Taste and adjust the sugar if necessary.

4. Leave in the fridge for an hour before serving.
