Cream Caramel

Creme caramel is one of my most favorite desserts when it is creamy, but still light, with the right amount of sweetness. However, I absolutely can not even taste a creme caramel that has a sharp egg yolks' flavor.
When I decided to make creme caramel for the first time, I looked into dozens of recipes from different books and baking websites. I finally chose this recipe from the Savory for Desserts book which uses both milk and cream to create the creamy texture and enough vanilla to weaken/hide the egg yolks' flavor. The result, in my opinion, was fantastic.
The original recipes uses heavy double cream which I couldn't find in Vancouver's stores so I replaced it by whipping cream; you can use double cream if you find one. Also, the original recipe does not use vanilla bean and so I left it is as an optional choice. However, the full and reach aroma that you get from the vanilla bean is definitely beatable by no type of vanilla extract. Therefore, I highly suggest that you use the bean if you have some in your kitchen. You can drop the vanilla extract from the list if you use are using the bean but I used both since I really like the vanilla flavor.

Meatballs with Tomato Sauce

It may be served as the main course with spaghetti and a sprinkle of Parmesan cheese on top or may be eaten in a soup. Although meatballs are usually made with beef, different recipes call for other meats as well. The recipe presented here is a classic dish which calls for beef, tomato and fresh herbs.

Whole Grain and Bean Salad

While whole grains such as barley, oatmeal or brown rice are excellent sources of fibers and amino acids, beans are known for their protein contents as well as vitamins and minerals. Combining these two nutritious ingredients with some good olive oil, fresh herbs and a splash of lemon juice, makes a delicious and healthy dish.

Marshmallow Cheesecake

This is a very light and fluffy cheesecake, perfect to serve after lunch/dinner or in late night gatherings. It is delicious as it is but you can also try it with some chocolate sauce or fruit sauce---such as strawberry sauce or mixed berries sauce--- to add some color and more taste to it.

Tortilla Pizza

Couple months ago, I found a Focaccia bread recipe in a Persian cooking weblog, Rooye Miz-e Ashpazkhane (monnom.blogfa.com) with a very interesting list of toppings; very different from the Focaccias I had in restaurants and resembling pizzas. I tried the recipe and I fell in love with it. I then decided to modify it a little bit and try the toppings with different type of breads. Here is a simple version of that recipe which adds the toppings to tortilla bread: very quick way of baking an extraordinary delicious appetizer for your afternoon snack, small friends' gathering or large parties with many guests.
